Meet the Founder
It is almost impossible to sit across from Saúl Rubio, owner of the La Carreta's and Adobe Cantina & Salsa Restaurants without absorbing some of the charismatic energy that he exudes. At age 36, Saúl's story is one that feel-good movies and TV shows are made of.
From washing dishes and waiting tables to opening a Mexican restaurant in a town that had never had a successful Mexican eatery, Saúl's accomplishments win the praise of the business community, as well as the hungry patrons who savor La Carreta's satisfying repast.
Even its name tells a heartwarming tale. "Years ago in Mexico, each family would grow produce, including tomatoes, onions and jalapeños, and would put them together on a small wagon ("la carreta") to take through the town to sell their wares or barter for other goods. Townspeople saw that the food was beautiful and fresh and would follow the cart to make their purchases. The townspeople waited in anticipation for the cart and began bringing coffee or chocolate to the social gatherings. Upon arrival in Hammond, I found a place in the middle of town and thought that this would be a perfect place for people to get together," said Saúl in his soft-spoken, melodic voice.
And a good idea it was! Hammond, La Carreta's first location, has been in business for the past eight years. The restaurants have captured the tastes of the community with its food and its welcoming atmosphere.
